All fruit at Yarra Yering is hand-picked, sorted, then either de-stemmed or crushed into the traditional Yarra Yering “tea chest” 0.5 tonne open fermenters. Depending on the variety, stalks may be added back during the fermentation stage in baskets for easy removal when there is just enough stalk tannin present.
Hand harvesting allows the ultimate flexibility for a range of processing techniques on the desired wine style. Meticulous assessment of grapes in the vineyard as well as the winery ensures only the most desirable berries are selected for vinification.
Unique tea chest fermenters, designed by Dr Carrodus, enable quality small batch winemaking and gentle extraction produce our signature ultra fine-tannin structure. Maturation in our cool underground cellar.
Warramate
Nestled between Coldstream Hills and Yarra Yering with the first vines planted in 1970 upslope and across the fence line of the No. 1 Cabernet block, this excellent site and established vineyard was purchased in 2011. Planted to Yarra Valley classic varietals and also dry grown, we aim to overdeliver on quality and accessibility.

Our original 30 acres of premium vineyard has increased since being established in 1969 and we now farm 90 acres of continuous vineyard in Gruyere. Nestled upon a warm northerly slope in the Warramate foothills, our vineyard boasts ancient soils with impeccable drainage, elevated just enough above the valley floor to evade the delicate touch of spring frosts. These exceptional conditions yield wines that epitomise refinement, precision and elegance.
With an unwavering commitment to excellence, our vineyard nurtures its grapevines without the aid of irrigation, allowing nature’s artistry to flourish. Embracing the principals of sustainable viticulture, our yield remains naturally low, ranging from a mere 1 to 2 tonnes per acre. This deliberate restraint results in fruit with great intensity and concentration of flavour, and an abundance of natural acidity due to our cool climate.
Every aspect of our vineyard is meticulously tended to by our dedicated team, led by expert Vineyard Manager Andrew George. With exacting care, we undertake multiple passes throughout the season, from the initial pruning to the painstaking hand harvesting process, ensuring we deliver the highest quality grapes year in, year out.
